Nutty Vegan Zoodles

Vegetarian / Vegan / Serves - 4 /Cooking time - 20 min



9 Ingredients


Zoodle is a very light and healthy option for people who want to cut out on gluten or loose weight. This is a very healthy replacement of noodles. Can be served with or without steak.



Veggies


Carrot - 2 medium

Cucumber - 2 medium


spices


garlic - 3-4 cloves

lemon - 1 medium

Salt - According to taste

Black Pepper - 1/2 tsp

olive oil - 1 tbsp


Nuts


White Sesame Seeds toasted - 1/4 cup

Cashew Toasted - 1/4 cup


Preparations


Zoodles - wash and clean cucumber and carrot. Peel carrot and make

zoodle out of it . Don't peel cucumber and make zoodle out of it and leave the cucumber seeds aside.


Sesame Seeds - Dry Roast and dip in warm water for 4 hours.


Cashew - Dry roast and dip in warm water for 4 hours.


Garlic - Peel the garlic cloves.


Lets Cook


White Sauce -

  • Take dipped sesame seeds and dipped cashew add 1/2 cup water and blend for 1/2 minute.


  • Put garlic cloves, salt and 1/2 lemon in sesame seeds and cashew

mixture now bend to make it a smooth paste.


  • your white sauce is ready , keep it aside.

Zoodle -

  • Heat pan, pour olive oil in it and put pepper and let it pop for 15 seconds.


  • Put Zoodles in the pan add salt according to taste.


  • Toss the zoodles and saute them.


  • Add white sauce (The sesame seed and cashew mixture that we have already blended) and mix thoroughly.


  • Turn off the flame and squeeze around 1/2 lemon.


Serve it hot with steak , steamed chicken or with fried eggs.
